Prepped Chickpeas
Ingredients:
1 lb. Dry Chickpeas
1½ Gallons Spring Water
Tools:
Large Bowl or Tupperware
Large Pot with a Lid
Stirring Spoon
Directions:
Add your desired amount of chickpeas to a container. Rinse with water a few times. Cover completely under a few inches of water with enough room for them to grow larger.
Check after 1 hour to make sure there is enough water covering them. Soak for 16-24 hours total.
Strain the water and place in a large pot covering them with fresh spring water. Cover with a lid and bring to a boil on high heat.
TIP: Save the water you soaked your chickpeas in. This liquid is called aquafaba, and it is good to use for soups and baked goods.
When boiling, lower to a simmer stirring every few minutes for 20-40 minutes. Add more water if necessary.
The chickpeas are ready when the skins start coming off and they are soft enough to eat.
Strain and store in your refrigerator. Rinse them with spring water first if there is a residue from the bottom of the pot on the chickpeas.
You can add cooked chickpeas to many meals! You can make mash, beans, and even sauces!
